Nigel Slater's Veggie all-in-one Hotpot

Oven: 160 deg.C (140 fan oven) / Gas 3
Ingredients:
3 tblspns. olive oil
4 sliced onions
1 aubergine - slice in 1/2 lengthways then into 1/2" thick semi-circles
1 courgette, sliced into 1/2" thick rounds
800g (1lb.12.1/2ozs.) tomatoes cut in half
1 x 400g tin of flageolet beans - drained
1 x 400g tin of haricot beans - drained
50g butter (1.3/4 ozs.)
1 large carrot cut into ribbons, using a veg. peeler or mandoline
2 cooked beetroots, sliced into 1/2" thick rounds
6 springs of fresh thyme, salt and freshly ground black pepper

1. Heat the oil in a lidded casserole - medium heat - add the onions and fry for about 4 - 5 mins. until they begin to go golden brown.

2. Add 500  ml. (18 fl.oz) water and bring to the boil, reduce the heat until the water simmers and simmer gently for about 20 mins. - until the water has all but evaporated.

3. Heat another 4 tablspns. of the oil in a separate p[an and add the aubergine in batches and fry until lightly coloured on both sides - 5 - 6 mins.  Repeat the process with the courgettes.  Set aside.

4. Add the tomato halves to the stewed onions, season well and cover the casserole with the lid and cook for 8 - 10 mins or until cooked through.

5.  Add the beans to the onions, then stir in the courgettes and aubergines.

6. Melt the butter and the remaining oil in a frying pan - stir in the carrot ribbons until completely coated in the oil then arrange them in a tangle on top of the casserole.

7. Cook the beets 4 - 5 mins, and arrange them among the carrots.
Sprinkle some fresh thyme over.

Bake the complete hotpot for 45 - 60 mins until the veg on top have turned crispy and the casserole has thickened.

Burnt Aubergine & Chickpeas - Raymond Blanc's (delicious)

 
Ingredients - serves 4 (maybe!)
3 medium aubergines
4 tblspns. good olive oil
1/2 lemon - juice only
1/4oz. salt
8g black pepper
pinch of sugar
3ozs. (80g) drained and rinsed cooked chickpeas
10 dates - chopped
1 red pepper - finely chopped
small bunch of mint leaves - chopped
small bunch of coriander leaves - chopped
chilli - to taste  - finely chopped
1 clove of garlic - finely chopped
1.1/2ozs. (40g) crumbled feta
handful of flaked almonds, balsamic vinegar for drizzling and croutons to serve.

Prick the aubergines to allow moisture to escape while cooking.
2.
On a hot BBQ (or over a gas flame - using 2 forks, cook the aubergine until the skin is completely charred and blistered, set aside until cool enough to handle.
3.
On a small tray/board slice the aubergine open lengthways and spoon out the excess water and seeds.  Remove the flesh from the skin with a spoon and place in a large bowl.
4.
Drizzle with the olive oil (best if poss) and lemon juice.
Season to taste with salt and freshly ground black pepper, then add a pinch of sugar.
5.
Reserve some of the chickpeas, pepper and mint for garnishing, and mix in the remaining chickpeas, dats, pepper, mint, coriander, chilli and garlic. Taste for seasoning.
6.
Spoon the aubergine into the middle of your serving dish and garnish with the feta, flaked almonds and reserved other ingredients.
7.
Drizzle a little balsamic vinegar over and a little more olive oil and top with croutons.
 
Less than 30 mins. preparation time
10-30 mins cooking time

Reza Mohammad has a series on the Food Network called Reza Prince of Spices - he has some super recipes, and the programme is really entertaining, with the wonderful colours of India, and some fabulous palaces that he visits on his culinary journey.

You can substitute a 1/4 teaspoon of asafoetida with a mixture of 1/4 teaspoon of garlic powder and 1/4 teaspoon of onion powder.  Asafoetida has an awful smell, but is considered healthy, and can be made from scratch with crushed garlic and onions, but it's fairly easily bought in most supermarkets.

Great British Menu 2012




I haven't been watching every episode of this series, but try not to miss Fridays when the judging is done.  I have enjoyed it, and love the judges crits.   I probably mostly go with Pru.  (I also love her jewellery!)  I do believe, in general, that Foodies watch with great interest, but most of us couldn't in any way achieve the heights reached - certainly not at home! Somehow or other, amongst all the dishes 'plated up' the judges manage to choose the most excellent.  As much as Oliver Peyton is a slight grump during the series, he shows so much enthusiasm on the day and is terrific.   There's definitely a fascination about watching these programmes.  Cant wait for the next series.

Great British Menu 2011 - critique ......


I have been watching this series - (I love Friday's judging day), with Matthew Fort, Pru Leith and Oliver Peyton. Oliver Peyton grumbles his way through the judging and is usually very critical. I don't find anything wrong with this - as his judgement is often right. I love Pru Leith, who seems to calm both men down from almost coming to blows, and her criticisms are also very on target. Matthew too is a major part of this team. They work extremely well together and I love watching them.

However, when watching Oliver on The big day of the "Street Banquet" - - he was just a joy to behold. He seemed to be having a wonderful time, and was thoroughly proud of the occasion. Somehow or other, they come up with the goods, and it looked as if absolutely everyone enjoyed the day too. It must have been a very stressful event for the Chefs, but the food looked tremendous

Masterchef 2011

The Winner! - Tim Anderson
This was such an excellently deserved win - although the competition was very tough. In fact, at one stage, I thought there were going to be 3 Masterchef Winners! The food from all of the final contestants was wonderful, but Tim's was exquisite.

Masterchef 2011

This most recent Masterchef has had me bored and interested through this series. I love the combination of Greg and John together but some of the contestants have been a bit tedious to watch.

This series has had a revamp too, which I'm still not sure about as it seems to concentrate on the contestants rather than their actual dishes. However, I am enjoying it again and will carry on watching :).

Raymond Blanc - Kitchen Secrets

I can sit and listen to Raymond talking for an age, which makes his programmes very watchable for me. I love his recipes but apart from his book Simple French Cookery - I really dont use many of them. This book is well worth owning and I think he's used some of the recipes in this series.

I'm fascinated by Raymond's skill, where he makes everything look so simple, with the help of Adam of course! ...... I have been lucky enough to stay at Le Manoir au Quatre Saisons and have to say it's a complete treat ...... expensive, but wonderful.

Celebrity Masterchef 2009

Masterchef Winner
Jayne's Menu:
Seared scallops on apple puree with ground walnut sauce & fresh herbs.
Pan fried Veal on a bed of baby red chard with truffle potatoes and a veal jus.
Lavender Pannacotta decorated with crystalised violets.

Iwan's Menu
Spicy Thai Prawn soup with straw mushrooms, chilli, lemongrass & ginger.
Pan fried sea bream, red mullet & scallop on mediterranean vegetables
with tomato salsa.
Eton Mess with wild strawberry liqueur

Wendi's Menu

Baked goats chees on beetroot puree and peashoots, thyme roasted baby beets, accompanied by soda bread.
Roast turbot with lobster on mashed potato and green beans with
a lobster sauce & vinaigrette.
Chocolate bread and butter pudding with prunes soaked in armagnac
and vanilla cream.

PS: September 2009: I haven't been seriously following the latest Masterchef, as I've really lost my interest in the programme. I decided to watch a recent episode on iPlayer, and as much as I love food and foodie programmes, I dont think I have the patience to watch this series all the way through. Does anyone else feel the same way?

Celebrity Masterchef - July 2009

This Celebrity Masterchef has been watchable (but not madly exciting), with John and Gregg giving their normal good advice and genuinely looking as though they are going through all the traumas with the celebrity contestants - Wendi Peters, Jayne Middlemiss and Iwan Thomas.

I cant say I've felt a spark of excitement with many of their dishes, although the Moroccan dishes looked very tasty. However, the celebrities worked their socks off and I wouldn't have envied them their semi-final tasks, ending with cooking for Pierre Koffman, Michel Roux, Michel Roux Jnr, Alexis Gaultier and Patrice Martineau - this was rather a daunting and hefty line-up to say the least - and compliments from these great chefs doesn't come easily but I think all the celebrities came away suitably awestruck.

Hugh Fearnley Whittingstall - June 2009 TV Series

Celebrating Summer in Hugh's new series of River Cottage, which started yesterday on Channel 4 is as delightful as his past series. He has a lovely presentational style, and we get a super view of the countryside to boot! He also shows us about his 'landshare scheme' and other country matters (which us Townies know very little about). ( I might mention that he may go slightly over the top with his puns - - - - but we dont mind at all!)

His Wholemeal Honey & Carrot Cake is a recipe I shall definitely be trying out.

This ice cream recipe sounds lovely too (from The Guardian) ................... Mint and mascarpone ice-cream

I tend to rewatch his tv cookery programmes - (lots of recipes on this link). I love his style and find his recipes very do-able. I particularly enjoyed his veggie growing series - James Martin Digs Deep - plus the recipes that went with the programme.
(Mind you, I do like watching all his programmes.)

Well! the last few episodes of Masterchef were very exciting. I wished all three contestants could have been awarded the Masterchef title. Their tasks were extremely tough and they all did wonderfully. Cooking for some of the world's top restaurants and chefs cant be easy on the nerves! However, only one won - - deservedly -- but I feel positive that the other two will find work in no time at all - they certainly wont stop cooking!

Hugh Fearnley-W. & Valentine Warner - - - TV Food Programmes - (UK)


Two of the nicest food programmes on tv at the moment, (in the UK), are
'What to Eat Now' with Valentine Warner and 'River Cottage Autumn' with Hugh Fearnley-Whittingstall. There are some terrific recipes in both programmes, and both are lovely to watch.

I am missing 'Britains Best Dish' - which was very well presented and enjoyable. (The judges - Jilly Goolden, Ed Baines and John Burton-Race were great.

'The Restaurant' with Raymond Blanc is also worth watching - although this has almost finished. Anyone who's been addicted to watching this may be wondering who will actually win a partnership with M.Blanc - I personally, dont like any of the contestants or what I've seen of their food. Maybe the final episode will reveal all!
