Cold Summer Sweetcorn & Potato Soup - very very easy


(made in the microwave) -
is lovely served either hot or cold.

Ingredients:
1 medium/large potato - peeled and roughly chopped or
tinned potatoes would do.
1 medium onion ditto
1 clove of garlic - peeled and crushed
1 can (340g) of good sweetcorn kernels - drained and rinsed
Cold Pressed Rapeseed Oil
single cream (or little milk) - if fancied!
seasoning (S&P)
home made chicken or veggie stock or stock pdr. (Knorr Stock Granules are good) - amount of stock to choice - depending how thick you like your soups.


1. Place chopped onion, potato* and garlic into a large pyrex bowl, sprinkle well with some oil and zap on 'High' until veg have just softened. Turning once or twice.
*add tinned potatoes with sweetcorn.

2. Add the sweetcorn and enough stock to well cover and zap for at least 10 mins.
Taste for seasoning.

3. Cool slightly then liquidise till creamy - adding a glug of single cream if wanted.
This wont really liquidise completely smoothly - but as near as damn it will do!
Taste again for seasoning.
