Soy Mushroom Marinade

 



This is really easy and pretty tasty:

Ingredients:

approximately: 50ml sunflower oil

2 tblspns Maple Syrup

1 tblspn  Rice Vinegar, (Mirin,)

1 tblspn Light Soy 

1lb. chestnut mushrooms (less is fine) - discard stalks.  

Method:

Quarter or chunkily chop the mushrooms, and place in a bowl.

Make up the marinade, mix well, and pour over the chopped mushrooms. Taste. Little seasoning if wanted.

You can leave these for minimum of about an hour - or longer.

They are very nice in a salad at this stage or as is, as a cold side dish.

Melt about 50g butter with a little oil, tip the mushrooms and juice into your frying pan and cook for around 5 mins - or to your taste.

Pour these over steamed rice, and maybe add some roasted chicken.

They are also nice cooked and eaten cold.
