INGREDIENTS:
1.1/2 tablespoons of cornflour
1/4 cup of warm water
1 tsp, lemon zest (or less)
1 tblspoon lemon juice
1/4 cup of granulated sugar (brown or white)
1lb strawberries (or blueberry and strawberry mix)
Remove the stalks and halve or 1/4 the strawberries depending on the size
Mix the first 5 ingredients together in a bowl - until smooth
Place in saucepan on lowish heat, and stirring, blend together till sugar crysatals have dissolved.
Add the fruit and bring gently to the boil, stirring to coat the fruit.
lower the heat and stir often so fruit and thickening syrup doesnt stick.
Do this for about 5 minutes.
Remove from heat and place nto a pretty bowl - (or bowls)
Cool/Chill and servie with cream or ice cream.
