Marmalade & Sultana Cake (all-in-one - almost!)

Oven: 180 deg.C : approx. 1 - 1/4 hrs. :
makes approx. 10 slices if made in a loaf shaped tin.


Ingredients:

6ozs. (175 g) self-raising flour
1/2 tsp. baking powder
pinch of salt
6ozs. demerara sugar
6 ozs.cold butter (cheap butter is fine - cut into pieces)
3 eggs (medium)
3 tbl. marmalade (with or without peel) or you can use low sugar apricot jam - which is very nice!
handful of sultanas shaken in some of the flour


Method:
Mix the sugar, baking powder, salt and flour together in a food processor.

Add the butter pieces and process until 'breadcrumbs' - which dont have to be too fine.

Pour into your mixing bowl - add the eggs, marmalade and dried fruit.

Using a hand-mixer, mix the ingredients together, and if they seem a little stiff, add some hot water (not too much).
Mix again until you get a good 'dropping' consistency.

Bake for about an hour and check with a skewer to see whether the cake is cooked through. If the top is browning too quickly, cover with foil until ready.
