Sweet and Sour Cabbage - delicious!


Ingredients:
1 pointed cabbage - halved and roughly shredded
small amount of melted bacon fat plus bits of bacon - roughly chopped
small knob of butter
1 onion - peeled and roughly chopped
1 peeled and chopped sweet apple (optional)
small amount of salt and black pepper - to taste
1/4 cup (approx) cider vinegar 
1/4 cup (approx) demerara sugar

1. Melt the bacon fat and butter - (or oil will do) - and fry the small pieces of bacon for a few mins.
2. Add the rest of the ingredients, turning them well, while cooking.  Fry until beginning to soften.

It's either ready to eat at this stage, when the cabbage is just cooked, 
or you can put it into an ovenproof dish and leave on about 150 deg.C until you are ready to eat it.  The longer you leave it - the better it tastes!  (dont burn it though!)

Taste for seasoning - and enjoy.
This reheats very well, and can be kept for a few days in the fridge.
