Mincemeat - quick, without Suet - suitable for vegetarians - lovely with vanilla ice cream too :)

1 cup  of sultanas 
1 cup of raisins
1/2 cup of currants
1 tsp. cinnamon
1 apple (sweet is probably better) - peeled, cored, grated or 'blitzed'
juice and grated rind of 1 lemon

Place all ingredients into large bowl and stir well together OR
place all ingredients into your food processor and blitz.  

I haven't used nuts in this recipe, but you could add blanched almonds - or nuts of choice.

I use a jam jar, pour boiling water (carefully) into it to sterilise - (lid too). Cool slightly.

Place Mincemeat Mixture into the jar and replace lid.

This will keep fairly well either in the fridge or frozen.

You can also add some alcohol to the mix - which will lengthen its life :)
