Fairy Cakes with Honey (all-in-one recipe and - easypeasy)



This is a pretty basic Fairy Cake (Cupcake?) recipe.   I put small shards of Terrys Chocolate Orange in the tops before baking.  (Chocolate pieces work, but not Smarties) Decorate any way you want - buttercream, icing, sifted icing sugar, fruit, little flags, name tags, etc.

Oven: 170/180 deg. C
Ingredients:
100g soft unsalted butter
125g caster sugar or runny honey  (runny honey is lovely)
2 eggs
150g self-raising flour
1 tsp. vanilla extract
2 tbls. natural yogurt

Have about 12 - 14 paper cases ready on a baking tray.
Place all the ingredients into one bowl and beat - (dont overbeat) - until a lovely creamy batter is obtained.
Using a teaspoon (to push) and a dessertspoon or tablespoon, put some of the batter into each paper cup.  (About 3/4 full.)
Bake for approx. 15 mins.  (may need a few minutes longer, depending on your oven.)  Dont overbake as they will continue cooking once you have taken them out of the oven.
Remove from the oven and cool.
