Oven: 190 deg.C - approx 45 mins. (check timing)
Ingredients and Method:
1. In a food processor (or rolling pin and plastic bag) crush your favourite biscuits to a nice crumb consistency -
eg. Choc.Digestives, HobNobs, Plain bix, Macaroons, etc.
Pour these (about 1/2" deep) into a well buttered/greased baking dish then
2. Cream together until smooth.
8 ozs. (250 g. approx) Ricotta or Curd Cheese
8ozs. Quark
6-8 ozs. Creme Fraiche ('Light' is ok)
1 tblspn. Cornflour
3. Mix in:
2 beaten eggs
5-6 ozs. (150-175g) golden caster sugar
1 tsp. good vanilla
Mix well. Pour on top of the biscuit crumbs and bake until beginning to go golden and mixture is set. Cool the cake, and you could top it with sweetened or unsweetened Sour Cream, fresh fruit, etc. Grate some chocolate over the top too! Refridgerated - this keeps well.
