2 cups of self-raising flour
1 tblspoon of sugar
2 tbls of soft butter or 'Bertolli' low-fat spread (make sure you can bake with this if you choose another make)
Little grated lemon zest or some vanilla - whichever flavour you prefer.
1 egg
1/2 cup of milk
Place all ingredients into your food processor and mix well together.
This comes out as a softish dough -
Place on a floured surface, knead together very lightly, and gently roll out to a 15" x 5" (approx) strip and trim the edge.
Filling:
I use my home-made mincemeat recipe but you can also use the following filling:
2ozs. of butter
2 tbls. clear honey
1 tsp. cinnamon
1 cup of chopped glace cherries
1/2 cup of blanched almonds
Cream the butter, honey & cinnamon and spread onto the pastry.
Sprinkle with the remaining ingredients.
Carefull roll this up and cut into 12 segments (number is not crucial - just make sure it fits around your baking dish.)
Place the segments, cut side up, side-by-side, in a greased/floured baking dish.
Bake for approx. 1 hr. (may need less) - test with a skewer.
Cool, sprinkle with sifted icing sugar, and serve buttered or plain ......... lovely both ways.
