8 ozs. (2 cups) sultanas
8 ozs. raisins
4 ozs. (1 cup) currants
1 - 2 tsps. cinnamon
1 or 2 apples - (any sort) - peeled and cored
juice and rind of 1 - 2 lemons (taste to make sure it's not too sour)
Food process or mince all the ingredients well together - adding a bit of alcohol - if you fancy :).
I use this reasonably quickly, and wouldn't keep it for ages in the fridge, but it does freeze well.
It can be used just as regular mincemeat for - - *tarts, cakes & filling for little *pastry things - etc.
Ingredients for *Sweet Shortcrust Pastry
90g (3½oz) butter softened
65g (2½oz) caster sugar
3 egg yolks
200g(7oz )plain flour, plus extra for dusting
Method:
- Cream the butter and sugar together in a bowl until well combined, then beat in the egg yolks, one at a time until full incorporated into the mixture.
- Mix in the flour until the mixture comes together as a ball of dough.
- Tip the pastry out onto a floured work surface and knead briefly until smooth.
- Wrap the pastry in cling film and chill for 30 minutes. Alternatively, it can be frozen for use at a later date.

My daughter lives in Ukraine and wanted an easy mincemeat recipe as all ingredients are not always available - this fits the bill perfectly, thank you.
