Nettle & Spinach Soup

As there are tons of nettles around at the moment -
thought it might be interesting to try
some Nettle Soup.
You might have to wear thick gloves when picking them!

I slightly chickened out and used some spinach leaves too, as I think just the nettles on their own, may be a little bitter. I made this soup in a large pyrex bowl in the microwave.
Try it - it is delicious!

I sauteed the following in some olive oil and butter -
a large chopped (peeled) potato,
a chopped banana shallot &
a large garlic clove
Season with salt & black pepper
Saute these until soft.

Add a goodly amount (approx 1/2lb. - or less) of your washed nettles and (a pack of) spinach leaves - they will shrink down as they wilt.
When they have wilted down, add your hot stock (chicken or veg stock) to well cover the leaves, and cook for at least another 10 mins until the potatoes are soft and cooked through.
Stir from time to time.
Liquidise to a smooth creamy consistency, adding more stock if necessary, and re-season.
Serve with a dollop of sour or sweet cream.

Well it certainly sounds good. I've never mixed nettles with spinach before, though - but I'm sure it tasted delicious.
