Beetroot - cakes and all!

I love Beetroot! Try Valentine Warner's recipe.

To cook beetroot
:
try not to pierce the beetroot's skin as it will bleed easily. It's also a good idea to wear gloves! You could put a little cider vinegar into the water - not sure if this helps!


Place the raw beets in a saucepan of cold water.

Bring to the boil and cook until soft.
That's it really. Just test from time to time with a skewer to see if they are soft enough. This will, of course, pierce the skins, but ..... you have to test them somehow! When cooked, carefully remove the skin, and serve.

Lovely served hot as a side vegetable, or cold, with a sweet vinaigrette* - as a salad dish.

You can also roast your beets, wrapped in foil, - - they have a good flavour when roasted.
