Mozzarella, Tomato & Basil Salad

The ingredients for this very simple, lovely summer starter - (or a bigger portion as a main!) .............
Slice the tomatoes and the mozzarella, and layer, similar to above - or make your own pattern!
Sprinkle over with basil leaves (torn or leave whole), olives, salt, black pepper, and a little sugar.
I also add a good sprinkle of dried basil and oregano - (looks pretty!)
Drizzle over the top with either vinaigrette or good olive oil and/or balsamic - delicious.

The best buffalo mozzarella I have found is Garofolo - bought at Waitrose - a tub of small balls of mozzarella - not cheap but worth the price.
PS: Above photo has a creamy blue cheese added ............. I ran out of mozzarella!
