Courgette Soup - made in the micro.

Ingredients:
1.1/2lbs (700g) unpeeled courgettes chopped - ends removed
2 small/med. potatoes - peeled and chopped
1 small or 1.2 large onion - peeled and chopped
clove of garlic - peeled and crushed
S&P, olive oil, dried Oregano
1pt. stock Veg. or Chicken + 1/2pt. water (or more stock - whichever you fancy)
knob of butter

Put all the roughly chopped veg. into a large Pyrex bowl.
Toss the veg. in some olive oil (2-3 tblspns.) cook the veg. but not the liquid, for 10 mins. on High. - - (high wattage micro.oven).
Turn veggies after 5 mins. so they all get softened.

After your 10 mins - add 1/2pt. stock and cook for further 5 mins.
Then add another 1/2pt. stock and 1/2 pt. water and micro another 5 mins.

Leave to cool then liquidise till nice and creamy. You get a lovely pale green colour with slightly darker spots.

Season to taste, adding a few large pinches of dried Oregano and a drizzle of olive oil. I dont always like to season early on, when I'm using ready-made stock, as it's usually quite salty.

This soup is lovely hot, served with a knob of butter in each bowl.
You can also have this soup cold with the addition of a large blob of any sort of cream or yogurt.
