1 cup demerara sugar
1 cup sunflower oil
3 beaten eggs
1 tsp vanilla
then Fold in:
1.1/2 cups plain flour (sieved)
1/2 cup wholewheat flour (or use all Plain)
1 tsp cinnamon
2 tsps baking powder
pinch of salt
5 cups of peeled, diced apples (approx. 1.1/4 lbs)
handful of sultanas/raisins dusted in a little flour
Stir together but mix well.
Pour into a greased and floured 9 x 13" baking dish
If wanted, sprinkle on top: 1/2 tsp.cinnamon and 1/4 cup of sugar - mixed together.
Bake 190deg. C (350 F) for approximately 45 minutes - test in the center
with a skewer to see if cooked through.
