Mincemeat Fruit Cakes - very easy and even easier!

I recently found a jar of Mincemeat (vegetarian), in my fridge, (tucked away at the back of course), that I hadn't used since last Christmas!  If you also still have a jar that you'd forgotten about and had no idea what to do with it - try either of these recipes ..........
Oven: 190 deg.C - 375F, Gas 5. (Fan Oven 170 deg.C)
Timing: 25-30 mins approx.
1. Ingredients for almost All-In-One Cake:

175g (6ozs) SR Flour
1 tsp. Baking Powder
100g (4ozs) demerara sugar (most regular sugars will do)
100g (4ozs) butter or soft margerine
2 eggs - beaten
1 tsp. ground cinnamon
3 tbls. milk
grated rind of 1 lemon
150g (5ozs) mincemeat
9" sq. baking tin - greased and floured (or lined)

1. Place the first 8 ingredients into a large bowl and beat for 2 - 3 mins. until the mix is well combined and smooth.
2. Fold in the mincemeat - or just quickly mix it in with the electric whisk.  Dont beat too much.
3. Spread into your baking tin/dish, sprinkle a small amount of sugar over the top and bake.
4. After approx. 1/2 hr. test with a skewer to see if cooked through to the centre.  If it starts to brown too much, place a piece of tin foil over the top until cooked through.
5. Cool ............ and eat.  This cake stores pretty well in an airtight tin.

2. Ingredients for All-In-One Cake:
Oven: 180deg. C - approx. 
Baking Time: 1 - 1.1/4 hrs.  - check cake after 45 mins / hour - cover with foil if browning but not cooked through

6ozs (175g) Self-raising flour
1/2 tsp. baking powder, pinch of salt
6ozs caster sugar
6ozs. (Bertolli/Flora) Vegetable fat with olive oil - (the soft variety and check it's suitable for baking, as some arent)
3 medium eggs - beaten
approx. 3 tbls. of vegetarian mincemeat - (little more is fine) - you can also use marmalade or low sugar apricot jam which is very good too.

1. Mix all ingredients together well - but dont overbeat.
2. Put into large (2lb.) greased and floured loaf tin or whatever shape you've chosen.   Smooth over and tap down gently to stop any air bubbles or spaces.
3. Bake!
