Gypsy Creams - Biscuits (US = Cookies)!

Ingredients:3 ozs. Sugar (75g)
2 ozs. White veg. fat (lard) (50g)
2 ozs. Butter (50g)
1 tsp. Golden Syrup3 tsps. boiling water
1/2 tsp. Bi-Carbonate of Soda
4 ozs. Self-Raising Flour (110g)
1 cup of Porridge Oats
Method:
Cream fats and sugar
Add Golden Syrup and boiling water
Add dry ingredients - blend gently together.
Roll into small balls - Press down to flatten very slightly.
They will tend to spread a little so dont put them too close together.
Bake on a greased baking tray:
preheated Oven: 180 deg.C (350 deg.F) (Gas 4) for approx. 15 mins.

Filling:
1.1/2 ozs. butter (37g) approx.
1.1/2 ozs. Icing Sugar (37g)
1 dessertsp. Cocoa (tablespoon will do)

Cream filling ingredients together and sandwich between cooled biscuits.
These biscuits dont keep well for more than a couple of days.

Apologies as some of my recipes are in "old money"! but the cookies are no less delicious!
